******************************** Antipasto Kebabs ******************************** Ingredients: 8 slices cooked beef, cut into 1" strips 16 ripe olives, pitted 8 small cherry tomatoes 8 feta cheese cubes, 8 artichoke heart quarters, drained 1/2 cup italian salad dressing 2 cups minuet lettuce 8 9-inch skewers Preparations: Roll up beef strips pinwheel fashion. Alternately arrange beef pinwheels, olives, tomatoes, cheese, artichoke hearts on skewers. Place kebabs in shallow container. Pour dressing over kebabs and refrigerate several hours or overnight. To serve, arrange on top of lettuce. Makes 2 Servings.
