Not suitable to freeze or microwave. INGREDIENTS 2 tablespoons oil 2 red Spanish onions, sliced 1 clove garlic, crushed 2 medium (about 200g) zucchini, chopped 250g mushrooms, sliced 1 tablespoon chopped fresh chives 2 tablespoons chopped fresh basil 1 teaspoon cracked black peppercorns 8 eggs, lightly beaten 250g mozzarella cheese, chopped 2 tablespoons oil, extra METHOD Heat oil in pan, add onions and garlic, cook, stirring, until onions are soft. Stir in zucchini and mushrooms, cook, stirring, until onions are soft. Stir in herbs and peppercorns. Combine vegetable mixture, eggs and cheese in bowl. Heat extra oil in large pan, add egg mixture, Cook over low heat until base is lightly browned and top is almost set. Place pan under griller on high heat until top is set and lightly browned. Cut into wedges. Serve with salad, if desired. Serves 4.
